An exquisite Bouillabaisse for 4 (Marseille specialty)

 
4 filets of mullet
4 thin slices of John Dory
300g squid
4 filets of scorpion fish
4 prawns
Melt-in-the-mouth potatoes
½ litre fish soup
Salt, pepper
Olive oil
 
Potato emulsion
250g potatoes
100g milk
100g liquid cream
65g butter
Salt, pepper
 
Fish soup
1 kg fish trimmings
4 cloves of garlic
½ fennel
½ leek
1 finely chopped onion
3 tomatoes sliced in 2
1 branch of thyme
1/2 bayleaf
40g tomato paste
24cl white wine
1g saffron
5g coarse ground pepper
1 litre lobster stock
 
Ailloli (garlic mayonnaise)
25cl fish soup
50g potatoes
1 egg yolk
7.5cl olive oil
25g white garlic
½ pinch saffron
 
End:
Grated parmesan, croutons, pickled tomatoes, sea salt
 
Method
Fish soup: gently cook vegetables in olive oil, add fish bones, cook another 5 minutes, add white wine, reduce by half, add lobster stock, saffron, pepper & herbs, cook on low heat for 30 minutes, put through vegetable mill, then through a large-holed strainer, put to one side.
Ailloli: cook potatoes in fish soup, reduce soup until syrupy, whip in all ingredients like a mayonnaise
 
Potato emulsion: boil potatoes, peel and strain, mix in all ingredients, put in a funnel, keep warm
 
Melt-in-the-mouth potatoes: peel potatoes, cut into thick slices (1 cm), cook in the fish soup, put to one side
 
End: plancha-cook all filets of fish, place thick slices of potatoes in plates, add fish filets, pickled tomatoes, sea salt, pour potato emulsion into a glass, serve with ailloli, croutons, grated parmesan and serve soup in a soup tureen.

Le Wardya is open every day, subject to season, from 7.30am to 11.00am and from 12.30pm to 4.00pm.
